Insalata di Riso 
Rice Salad

This dish is great for hot summer days. 
You can either have it on its own or use it as an accompaniment to a barbecue!  It's easy to make but it can be quite time-consuming because there are so many ingredients to cut!


Ingredienti:
(for a family of at least four people)

500g. di riso arborio - 500g. of Italian risotto rice

200g di maionese - 200g. of mayonnaise

Olio d'oliva - Olive oil

10 wurstel - 10 frankfurter sausages

6 pomodori - 6 tomatoes

Olive verdi snocciolate - Pitted green olives

Olive nere snocciolate - Pitted black olives

2 peperoni - 2 peppers

2 scatolette di tonno - 2 tins of tuna

4 uova - 4 eggs

1 cipolla rossa - 1 red onion

Pepe bianco - White pepper


La Preparazione: 

Step 1 - Boil the rice until it is soft.  Cooking times may vary so check the pack for instructions.

Step 2 - Whilst the rice is cooking, boil the eggs in a separate pan until they are hard and leave them to cool.

Step 3 - Once the rice is cooked, drain away all the hot water and re-fill the pan with cold water, so that the rice cools.

Now we can begin to make the salad!


Step 4 -  Take a large salad bowl. 
Put the mayonnaise into the bowl and sprinkle with pepper.
Slice the frankfurter sausages into small chunks, less than 1cm in width, and add to the bowl.
Slice the olives into thin segments and add to the bowl.
Cut the tomatoes into quarters, remove the seeds, cut into small segments and add to the bowl.
Do the same with the peppers and the onion so that all the vegetables have been added.

Step 5 - Peel the hard boiled eggs, cut them into segments and add them to the bowl.

Step 6 - Open the tuna tins and add the tuna to the bowl.  Pour a small amount of olive oil over the top.

Step 7 -  Now we can add the rice!  Drain the cooled rice and add it to the bowl. Give another sprinkle of pepper and mix everything well.  If the mixture seems dry, add a little more mayonnaise to taste.

Step 8 -  Now your salad is ready! 
It's best to store it in the fridge and to serve it the next day as
all the yummy flavours will have settled by then.
